Preparation for emergencies consumes large amounts of time for healthcare foodservice directors. Though natural disasters dominate the headlines, there are other types of disasters that healthcare foodservice departments need to address including H1N1 preparation, strikes, shootings and abductions. Hear about new trends in disaster preparedness from Char Norton, DM&A executive success coach, including preparations for internal emergencies such as power outages. Dan Henroid and Jack Henderson will share their experiences in preparing for disasters at the University of California, San Francisco (UCSF) Medical Center. Jack Henderson
UCSF Medical Center
Jack Henderson is the associate director for food service operations at UCSF Medical Center in San Francisco. He supervises more than 100 staff in a 550-bed tertiary-care hospital, with cafeteria sales over $4.5 million and catering sales of about $2 million. One kitchen produces all the food for patients, café and catering. Their annual food budget is $5 million. Jack has worked as a chef in London, Hong Kong, India, Israel, Boston, Berkeley and San Francisco. He was working at UCSF on October 17, 1989 when the earthquake struck. Although he was off duty at 5:04 p.m. that day, he went through the entire, earthmoving experience and emerged both shaken and stirred. He has used the lessons learned from that awful day to develop a disaster plan for UCSF Medical Center which, he hopes, will be used in the chaos that will surely result when the next major earthquake hits the Bay Area.
Dan Henroid
UCSF Medical Center
Dan serves as the director of nutrition and food services at the University of California, San Francisco (UCSF) Medical Center where he is responsible for all nutrition and food services at a 566-bed and a 140-bed facility. He is overseeing an evolving patient foodservice program including room service for the children's hospital, a redesign of the overall information systems, a $6.5 million cafeteria and kitchen renovation, and the planning of a new 289-bed women's and children's hospital. Currently, Dan is a PhD candidate in foodservice and lodging management at Iowa State University, and holds a master's and bachelor's degrees in food and nutrition, a registered dietitian and a certified food safety professional. Dan serves on the American Egg Board industry advisory committee as the healthcare foodservice industry representative and was just elected to the 2011 AHF Board of Directors.
Char Norton
DM&A
With more than 25 years as director of foodservice for several corporate and healthcare facilities throughout the United States, Char Norton is one of the most respected and experienced professionals in the foodservice industry. She provides assistance to corporate, healthcare and corrections owners with food service facility programming, operational audits, staff management, purchasing concepts and food safety/quality issues. Char formed The Norton Group, Inc. in 1989 after retiring as director of nutrition and food services at the University of Texas, M.D. Anderson Cancer Center in Houston where she managed an operating budget of $7.4 million with 245 employees, serving 10,000 meals daily in a multi-unit operation. She was one of the first to implement a cook chill system in healthcare. Currently, Char works closely with DM&A as part of their team as an executive success coach.
